Cooking and exercising become the daily routine in my life. I enjoy these time alone, no pressure, no need to deal with the unwanted emotion temporarily. Of course this is not trying to avoid the real life. After all, my life never stops moving on. But this is a retreat, an energy-booster, an stress-reliever, or a pain-killer for me. Let’s start from a healthy piece of breakfast toast.

Avocado egg salad with sourdough bread
Ingredients
- Half avocado
- 2 boiled eggs
- Salt & Pepper
- Optional: parmesan cheese or brie cheese on toppings/mayo/yellow mustard
The ingredients above is good for 2-3 breakfast according to my diet habit. Avocado egg salad is good to spread on bread to eat it directly. The optional part, parmesan cheese adds the creamy taste, mayo adds smoothness (but avocado belongs to fat already, actually not really need mayo), and yellow mustard adds the sharpness. Although I graduated from Le Cordon Bleu, I still love mixing ingredients to find my own favorite combination.
Some people might think, why is there no tomatoes or other leaves? It is because I love all kinds of salad and I prefer to eat it separately.
Wait, what happened to the other side of the sourdough toast? The purple brown spread? Haha, that is my personal craving for a long time. In Taiwan, it becomes more popular to put mashed taro and dried pork floss together inside the toast. I always want to try it, but as everyone knows, THE MORE YOU CAN COOK, THE LESS YOU WANT TO DINE OUT OR TAKEAWAY. So I happened to have mashed taro and pork floss at home, and it became like that! I like this creation, but I think it will go better with white bread, not the healthy sourdough bread.

Sourdough
Talking about sourdough, it is a long story. I have to start from why I become a picky-eater.
It was after the TEAMAWESOME kinds of fell apart in 2020 July, well, I called in KINDS OF because first, we still message each other as good friends, and second, we have been in long-distance for a long time already. I was not ready for all the breaking-up thing, I was tortured, since I used to spent tons of time skyping, messaging, and talking with him. I NEED A NEW THING TO FOCUS ON. Thankfully, the last 3 months in Japan I joined the gym, and the gym offered group exercise, called LES MILLS. This group exercise became my favorite, even after I went back to Taiwan. Although Les Mills doesn’t have real classes in Taiwan, I found the online platform. I love it so much because it includes all kinds of exercise, cardio, strength, core, dance, ballet, cycling, etc. It allows me to workout at home, especially in this Covid epidemic time. It is inexpensive, and I can even share account with my sister. I am so excited everyday to try different kinds of exercise on the platform.
Since then, my body type has changed, the body fat went down, the muscle weight increased. I became more conscious about my diet, and the most important reason is, I started to spent tons of time not on him anymore, but on researching all exercise and healthy diets. It transferred my attention to another place, luckily, I became super busy, leaving very little time to think of the empty heart.
Well, going too far from the sourdough already though. Here I want to say, carrying on the healthy diet in Vietnam, where I work, is much easier than doing that in Taiwan. There are so many foreigners in TP. HCM, so it is very easy to reach all foreign ingredients. But I am temporarily in Taiwan, the choice of ingredients become more limited, and the price becomes more expensive. However, I still found something. Here I recommend two shops, both doing sourdough bread. They are Northern European bakery, not cheap, but good quality.

I also love their cinnamon rolls. Actually, I don’t understand why cinnamon rolls became so popular in Taiwan recently haha. The first shop also offers other products like homemade butter and yogurt. All worth trying. I am still looking for more sourdough choices in Taiwan, recently I found one in Tainan, and there are more in Taipei. Entering the world of sourdough is so natural. Before I don’t like the sourness, and I never know it is possible to make bread without egg, milk and oil —> Traditional Taiwanese influence. But somehow I fell in love with the taste of the bread. I still love Japanese or Taiwanese style bread though. I think I became more Westernized……? But only one thing I have to insist: I LOVE MY BREAD WARM!!! The taste and smell become so good when the bread is warm!
So…… after talking to the screen for so long, I need to take a break. I hope buying upgraded plan of WordPress can push me keep writing the blog and stop me from quitting in half way like before. After all, I have to move on. But why moving on after almost 1-year breaking up thing? That is the next story.
